Fiesta Favorite

guacamole-bowlGuacamole is an essential summer dish, and HCG’s favorite guacamole recipe comes to us courtesy of some random person, Bob Cody, on All Recipes (thanks, Bob).  This guac recipe is always a hit at events and has lots of fans on All Recipes – it is the 16th most popular recipe on the site which to HCG equates to winning a James Beard Award.

In the interest of full disclosure, I must admit that I have never personally made this guacamole.  Joe always makes it and I always eat it.  MR even started calling it “Joe’s Guacamole” which made me feel jealous since Joe didn’t actually create it, Bob Cody did, and Joe just follows the recipe I printed.  It’s similar to how Johnny call this All Recipes bruschetta he and Trang make “TJ’s Bruschetta.”

What sets this scrumptious guac apart from other guac recipes is the lime, so make sure to include it.  We skip the cayenne pepper, though.

Ingredients

  • 3 avocados – peeled, pitted, and mashed
  • 1 lime, juiced
  • 1 teaspoon salt
  • 1/2 cup diced onion
  • 3 tablespoons chopped fresh cilantro
  • 2 roma (plum) tomatoes, diced
  • 1 teaspoon minced garlic
  • 1 pinch ground cayenne pepper (optional – we  never include this)

Directions

In a medium bowl, mash together the avocados (note: some people prefer a chunkier guacamole.  To achieve this texture, mash lightly or slice up the avocados.), lime juice, and salt. Mix in onion, cilantro, tomatoes, and garlic. Stir in cayenne pepper if for some crazy ass reason you want cayenne pepper in your guacamole. Refrigerate 1 hour for best flavor, or serve immediately.

HCG could kill an entire bowl of this guac it’s so good, and maybe we don’t have to feel so terrible about doing so – we’ve heard that guacamole is relatively skinny.  However, we’re pretty sure eating guac with an entire bag of regular (not baked) Tostitos Scoops cancels out any skinny factor.

TJ’s Bruschetta is unique due to the fact that we modify. Sure we looked towards AR for guidance but we took that recipe and knocked the socks off of it. Mods such as using fresh pecorino romano shavings and not melting them, diced red onions, and toasting the bread on a propane grill. This appetizer has changed lives. Many people have told me that if they were on death row and about to be executed, TJ’s Bruschetta would be the last meal they would want to enjoy. And I can guarantee that as they laid there slowly dying the only thing on their mind would be: God damn that was tasty bruschetta!

as someone who’s tasted “Joe’s Guacamole” I can atest to the fact that it is delicious. It was even more delicious than the warm, mini chocolate chip cookies that Joe was bringing to us fresh from the oven, while we lounged on the couch reading fashion books.

Audrey: Hope Joe’s Guac worked out!

JMJR: For my last meal before my execution, I would want either (1) Hope’s Cookies (chocolate chip); or (2) a DQ chocolate Blizzard with M&Ms (with a side of Rold Gold tiny twist pretzels in a little bowl and a large glass of Crystal Lite). Definitely not TJ’s Bruschetta.

Well, I made this delicious treat for a father’s day bbq tomorrow. I’m keeping my fingers crossed that this is in fact a crowd pleaser! Thanks, as always, HCG!

3 avacados to 1 lime is where it’s at. Keep it chunky and do bring the quote “crazy ass” heat. This dish is a close runner up to MR’s ( I mean Ina’s) mushroom lasagna that I’ll have the fortune of polishing off this weekend!
